Zoe was going to share this recipe, but was nervous because it is so involved. Pizza is one of Zoe's favorite foods and everyone in the family loves to take part in making it. We even had home made pizza for our family reunion last summer and all the kids swarmed around the kitchen to watch the action.
Pizza Dough
1 ½ c very warm water
2 teaspoons yeast
2 teaspoons sugar
2 ½ c bread flour
½ c semolina flour
1 teaspoon salt
1 Tblsp. Olive oil
place yeast, water and sugar in a mixing bowl and let it stand for 2-3 min. Once it starts to form bubbles add the dry ingredients and mix for 4-5 min. (you can use a food processor, stand mixer or knead by hand.) The dough will be a bit wet. It will loose stickiness as it rises. Place olive oil in a bow and rub it around. Put the dough in the bowl and turn it to coat it will oil. Let it rise for an hour until double in size before rolling out and baking.
Proofing
Take a ball of dough and roll it to the desired size, use plenty of flour. Place the dough on a hot non-stick frying pan and cook it for one to two minutes. Now remove the crust and top it how you like.
Pizza sauce
Mix equal parts spaghetti sauce and tomato paste
Baking on the grill
You will need a pizza stone. Place it on the grill grates and preheat the grill to 450+ degrees. Your pizza on the proofed crust should slide easily off of a flat surface (cutting board) onto the pizza stone. Bake for about 6 min until the crust is brown and cheese is bubbly.
Baking in the oven
You can skip proofing if you like, just roll out and top and then bake for 10-12 min at 450+ degrees
