seven cup pudding


Bianca shared this recipe that was brought from Scotland by her great-great grandmother Ellen Alexander McGavin (Nana). It is made at Thanksgiving and Christmas dessert. It used to be made with lard and take three hours to steam cook. Here it has been modernized (microwaves rock).

1 cup flour
1 cup sugar or honey
1 cup raisins
1 cup bread cubes
1 cup chopped apples
1 cup chopped nuts (optional)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 cup oil

combine dry ingredients, then add the wet. Mix well with a spoon. Cover with wax paper and microwave for 5 min. Uncover and stir. Cover and microwave for 5 min, continue cooking and stirring until done. PUdding will darken and thicken when done. Be careful not to overcook it or it will become hard. Serve warm with lemon sauce, ice cream or whipped cream. Can be refrigerated and rewarmed.
